August may see Rome empty out, but there are still a handful of new restaurants and openings worth noting. Spread between the city centre and the coast, they cater to those staying in town and those heading to the beach alike. Here's our (slightly more compact) list of new restaurants opening in Rome in August 2026.
Albertino alla Garbatella
A signature dish from Albertino alla Garbatella
Since 10 July, the Garbatella district has a new arrival from chef Alberto Mottola. Albertino focuses mainly on fish, with a few meat and vegetable dishes thrown in, blending classics with creative twists. It's also open for lunch with a slightly reduced menu, and its menu nods to Neapolitan cuisine. Address: Via Guglielmo Massaia 25/b.
Terrazza Giulietta
The new Terrazza Giulietta in Rome
Replacing Verve, this new project occupies the rooftop terrace of the DOM hotel on Via Giulia, in central Rome. Terrazza Giulietta opened in July and runs until the end of September, with a restaurant and cocktail bar. It's the brainchild of entrepreneurs Aldo Nascimbeni and Riccardo Sargeni, creators of l'Oratorio in Trastevere. Its aesthetic, drinks and dishes all evoke the Italian summers of the 1950s and 1960s. Allier

Opening on 9 July on Via del Gazometro in Ostiense, this cocktail bar with a kitchen has two souls: drinks and food. The wine list features over 150 reds, whites and sparkling wines from Italian and European cellars, alongside classic and signature cocktails. The food menu spans caviar, oysters, starters (many fried), mains, salads and desserts across meat, fish and vegetables, plus build-your-own charcuterie and cheese boards. PLNT
PLNT's veg pastrami in Rome
Around 20 July, a small venue dedicated entirely to plant-based cooking opened on Viale Aventino: PLNT. The owners of Aromaticus — another interesting name with two vegan restaurants in Rome — have focused on street food here, creating fully vegan hot dogs, smash burgers and pastrami to pair with sauces, fried snacks and homemade soda. Mornings bring all-vegan breakfasts too. Address: Viale Aventino, 107.
Pasticceria Max

A historic Tuscolano pastry shop has moved. The relocation from the address it had occupied since 2001 is just a few steps away, but it's significant: it lets Massimo Toppi expand into a new space with 20 indoor seats and a larger workshop. Here you'll find pastries, leavened goods, single-portion desserts, cakes and pizza — to enjoy on the spot or take away — plus large festive leavened cakes during the holidays. The other branch on Via Lucio Papirio remains open. Address: Via Publio Valerio, 78-42.
La Carcioferia

Opened this summer by Carciofi Romaneschi, a Lazio company that supplies artichokes and puntarelle to restaurants across Rome and beyond, this first restaurant is an ode to the artichoke. It sits in central Rome, not far from Campo de' Fiori. The menu features artichokes in every form — from salads to pasta — plus puntarelle prepared in various ways. Permanent artichoke sculptures decorate the space. Address: Largo del Pallaro, 1.
Cafè Conti & Co.

Officially opening on 16 July (still in progress) is the new venue from Sergio Conti, the man behind the successful Forno Conti, staying in the Esquilino area. The space is larger, with the same architectural concept by Studio Dispensabile's Germana De Donno, blending Scandinavian vibes with durable materials. Expect a coffee, leavened-goods and pastry breakfast offer plus a brunch menu. Address: Via Pellegrino Rossi, 1.
Sancho cucina di casa
Saturday 1 August brought a new opening from the Sancho family, owners of one of Rome's most-loved pizza-by-the-slice shops. The new venue sits just 20 metres from the first address, still in Fiumicino, and for the first time doesn't serve pizza. At the counter you'll find gastronomy and rotisserie dishes made in-house — aubergine parmigiana, meatballs, octopus, supplì, chicken with potatoes — which can also be taken to the beach by booking ahead. Staying in Fiumicino, another opening comes from a familiar name: Luca Pezzetta. His Casa Clementina opened on 1 August, replacing his Ippolito and next door to Pizzeria Clementina. Here you can taste chef Simone Curti's cooking, with seafood dishes spanning the great classics of fish gastronomy — crudos, grilled fish, pasta and sharing plates — alongside Luca Pezzetta's pizza and a range of leavened goods and pastries available at lunchtime too.
