Vancouver's Parker Rooftop Unveils a Japanese-Inspired Summer Menu with City and Sea Views
Summer in Vancouver means one thing: rooftop season is officially here. And Parker Rooftop is making sure this year's edition is more memorable than ever with a bold new menu that pairs perfectly with its artfully crafted cocktail program and sweeping downtown vistas.
Japanese-Inspired Plates, Meant for Sharing
Housed on the ninth floor of The Parker Hotel, this sky-high destination has long been a go-to for outstanding ingredients and knockout views of both the city skyline and the ocean beyond. Its freshly launched summer menu draws heavily from Japanese culinary traditions, blending techniques like flame-seared Aburi and pristine sashimi preparation with top-tier local produce.
Expect highlights like delicately flame-kissed Aburi sushi, impeccably fresh sashimi, and expertly grilled steaks — all punched up with bold accents of yuzu, miso, truffle, ponzu, and jalapeno. The entire menu is designed around sharing, making it ideal for a social summer evening out.
Cocktails That Steal the Scene
Great food demands great drinks, and Parker Rooftop's bar program rises to the occasion. Handcrafted cocktails run the gamut from the zesty, citrus-forward Midnight Margarita to the sake-based Demon Killer — each one as striking to look at as it is to sip.
Designated driver? No problem. The zero-proof lineup here is just as thoughtful, with alcohol-free negronis, espresso martinis, peach bellinis, and more rotating through the menu so nobody feels left out.
Golden Hour, Every Day
The summer menu runs daily from 3 p.m. until late, with a dedicated Golden Hour window from 3 to 6 p.m. that features discounted craft beers, signature cocktails, and small plates — think shishito peppers, truffle fries, chicken karaage, and shrimp tempura. Fancy dining without the fancy price tag.
