"Shanxi Flavor Daoxiao Noodles" is located in Kaohsiung's Huanan shopping district near Formosa Boulevard, a time-honored noodle stall with over 40 years of history and a familiar local taste. Its signature is knife-cut noodles shaved fresh to order — thick, springy and full of chew. Don't miss the house-special fried-sauce dry noodles: a generous bowl coated in a savory, slightly sweet sauce that clings to every strand, served with a bowl of light broth to cleanse the palate.
For a hot soup, the beef noodles are also a popular choice. The owner stews Taiwanese beef until tender and firm, paired with a mellow, non-greasy broth topped with scallions and greens for extra layers of flavor.
