If seaside grilling sounds like your kind of vibe, don't miss Sentosa GrillFest 2026. Running now through August 16 at Siloso Beach, this year's edition is its biggest ever, bringing together 42 food vendors across five distinct zones. Expect 18 first-timers, returning barbecue heavyweights, and a brand-new omakase-style dining experience — right on the sand, with air-conditioning.

Beyond the food, there are golden-hour cocktails, live music, and a marketplace where you can personally select top-tier ingredients before they're thrown over the coals.

We've worked our way through the full 42-stall lineup. Here are the six we'd happily line up for again.

1. Jett BBQ – Dinosaur Ribs

A returning favourite, Jett BBQ has earned a devoted following for its hearty Texas-style smoked meats. If you're ordering just one dish, make it the dinosaur ribs.

These monstrous ribs are the undisputed stars — impossibly meaty, fall-apart tender, and sliding clean off the bone. While you're at it, don't skip the loaded tater tots and tacos either.

2. Monger – Seafood Creations

Making its GrillFest debut, Monger brings a more polished approach to beachside barbecue. The concept revolves around premium seafood sourced globally, cooked over open flames and fragrant lychee wood to develop deep, smoky character while letting the quality of the catch speak for itself.

The must-order? Head straight for the classic grilled Boston lobster with fries (S$22) — a succulent lobster, lightly charred to lock in its natural sweetness, served alongside a heap of crispy fries.

3. Good Old Days Singapore Flavours × Chef Mel Dean

This collaboration between Sentosa's Good Old Days and Chef Mel Dean celebrates comforting local flavours, with a fully halal-friendly menu.

The ayam bakar gulai (S$18) is the dish to beat: a tender, char-grilled chicken leg swimming in a rich, aromatic Indonesian coconut curry that's smoky, creamy, and deeply satisfying. Fair warning — it brings some serious heat.

4. Chef's Grill – Omakase by the Sea

Picture this: an omakase-style feast inside an air-conditioned, solar-powered room, just steps from the ocean. That's the headline-grabbing newcomer at this year's GrillFest — and it's technically not a stall at all.

Chef's Grill is the festival's most ambitious dining experience yet, developed in partnership with the Singapore Chefs' Association. An eight-course live-fire menu (from S$128) unfolds right before your eyes, bringing restaurant-calibre cooking to the beachfront. Reservations are essential.

5. Craft'B

A GrillFest veteran and perennial crowd-pleaser, Craft'B has built its name on turning quality cuts into unfussy, flavour-packed plates. If the name rings a bell, it's because the brand has also appeared on Netflix and the Asian Food Network.

The Netflix-featured steak and fries (S$22) remains the benchmark — a grass-fed ribeye beautifully charred on the outside, juicy within, with house-made sauces that elevate without overpowering. Don't overlook the GrillFest-exclusive spiced grilled chicken either, seasoned with a nostalgic blend of Singaporean spices.

The Verdict

This year's lineup is the strongest yet. Book ahead for the Chef's Grill omakase if you're after something that goes beyond the festival's alfresco beachside eats.

Time Out Tip: Aim for a weekday evening if possible — Siloso Beach on a weekend afternoon, with 42 stalls under the full Singapore sun, is not for the faint-hearted. Getting there: alight at Beach Station and walk over to Siloso Beach.
