After five groundbreaking years at Sézanne, where he earned three Michelin stars at the Four Seasons Hotel Tokyo at Marunouchi, chef Daniel Calvert is striking out on his own. His debut independent venture, Chez Calvert, lands at the sleek Azabudai Hills complex this autumn, with doors set to open on October 1, 2026.
Calvert's career is a globetrotting masterclass in high gastronomy. The UK-born chef cut his teeth in elite kitchens across London, New York and Paris before taking the helm at Hong Kong's Belon. His move to Tokyo in 2021 proved career-defining: within three years, Sézanne captured three Michelin stars, claimed the No. 1 spot on Asia's 50 Best Restaurants list, and landed at No. 7 on The World's 50 Best Restaurants ranking. In 2026, Calvert was awarded the British Empire Medal for his contributions to the culinary arts and strengthening UK-Japan culinary ties.
Details about Chez Calvert remain under wraps, but early word points to a collaboration with renowned architectural designer John Pawson, who is crafting an elegantly minimalist interior. On the plate, expect French foundations elevated by Japan's superlative seasonal produce — a philosophy Calvert perfected at Sézanne.
Travellers hoping to snag a table should circle August 1 on the calendar: reservations open via the Omakase platform. Given the chef's pedigree, booking early is strongly advised.
