The kitchen is led by executive chef Daniel Watkins, co-founder of Acme Fire Cult. The menu focuses on low-waste cooking, fire, and fermentation, incorporating suppliers such as Shrub, Flourish, and Primeur. While the original concept was plant-based, the Spitalfields site introduces select dairy and eggs.

Menu and Interior Design
The interior design is created by artist and interior designer Faye Toogood. The space features a poured concrete floor, glossy bentwood chairs, white tablecloths, cream tiled walls, sculptural candlesticks, and two hand-painted murals of mushrooms.
Dishes include devilled eggs, a whole burrata served with beetroot ezme salad cooked over coals, signature tofu with pickled carrots, Georgian khachapuri with Sulguni cheese, and a king oyster mushroom vol-au-vent with a peppercorn and dulce sauce. The drinks menu includes cocktails, shrubs, sodas, kombuchas, and a selection of white wines ranging from £38 to £100.
