The world's first three-Michelin-star Indian restaurant opens a bar in London
Upscale Indian restaurant Trèsind is opening a new subterranean speakeasy beneath its Mayfair location.
If you consider yourself a curry connoisseur with cash to spare, Trèsind is likely on your radar. The seriously upmarket eatery, which debuted in Dubai in 2014, brought its three-Michelin-starred Indian fare to the suitably posh streets of Mayfair earlier this year.

Now joining its 57-cover main dining room and two private rooms is Tryst, a swish basement cocktail bar. The 30-cover subterranean space serves drinks inspired by Indian flavours and ingredients, with a debut menu by former SOMA head bartender Marina Juszczyk — each cocktail built around an ingredient from a different Indian region.
The Konkan, for instance, is a sour and savoury highball finished with a dehydrated toasted-coconut crisp made via a twice-carbonated batch and a four-hour aeration process.
The Bikaner takes its cue from Rajasthan's preserved fruits and dry spices — a sour serve combining kumquat, Johnnie Walker Blue Label, aamchoor, cognac, Amaro Montenegro, peppercorn and buttermilk.

Tryst's minimalist interior (natural stone and brushed metal) is arranged around a central bar that its owners say works less as a service counter than a stage for flamboyant techniques such as milk washing, sous-vide infusion and carbonation.
Tryst is now open at 13-14 Hanover Street, Mayfair, W1S 1YH.
