Founded in Fukuoka 50 years ago, Imaya Hamburger (今屋漢堡) has opened its first Taiwan store in Taipei's Songshan District. Currently in soft opening, it officially launches on September 10 with an 11-item menu — so you can now enjoy its signature "Frankfurter Cheese Egg Burger" without flying to Japan.

Imaya Hamburger is a half-century-old Fukuoka institution once hailed as "Japan's third-best burger". Unlike American burgers, its shape resembles a hot dog bun, because founder Katsuyoshi Imazaki started out with a hot dog food truck. After fast-food chains entered Japan, he began stuffing hamburger patties, sausages and eggs into hot-dog-style buns, creating a distinctive flavour that still draws food-loving travellers today.

The overseas debut landed in Taipei, with shop owner Tseng Yu-po becoming Grandpa Imazaki's first overseas disciple. Moved by his first taste of the master's handmade burger, Tseng resolved to bring this simple yet exquisite flavour back to Taiwan, travelling to Fukuoka repeatedly over two years to learn the craft before finally introducing this half-century-old artisan spirit to Taiwan.

The Taipei store carries on Grandpa Imazaki's made-to-order tradition, pairing hand-pounded patties and frankfurter sausages with combinations like "Cheese Egg Banban" and "Frankfurter Cheese Egg" across 11 flavours, priced from NT$129. To celebrate the opening, the first 20 customers daily from September 10–12 can upgrade to a golden fries and handmade black tea set for just NT$99.

Imaya's burger looks like a hot dog bun but uses a completely different bread — a long, oval-shaped bun (coppe pan) invented in Japan's Taishō era that fuses French coupé bread with American hot dog buns, then filled with daily hand-pounded patties and frankfurter sausages.
The fresh patty is a classic beef-pork blend enriched with caramelised onions — different from the usual fresh onions. Grandpa Imazaki once said "the onion is the life of the patty", lending it an elegant sweetness. The other star is the frankfurter sausage, crisp and juicy with a rich aroma, cut into a distinctive spiral that pairs perfectly with the long-simmered house burger sauce.
Instead of lettuce, Imaya stuffs its burgers with fragrant garlic-sautéed cabbage, showcasing Fukuoka's local food culture, finished with yellow mustard for a style you can only find at Imaya.

Must-tries include the "Cheese Egg Banban" — a hand-pounded patty with a whole frankfurter, rich cheese and a fried egg, delivering Imaya's classic double-up spirit; the "Classic Double Feast" for full-bodied patty flavour; and the "Frankfurter Cheese Egg", whose crisp, juicy sausage contrasts beautifully with the creamy cheese.
