Chunky Dough Brings Filipino-Inspired Desserts to Southport

A beloved Gold Coast dessert spot levels up from a university kiosk to its very own cafe.

If you're a Griffith University student in Southport, you've likely rewarded yourself after a long day of study with something sweet from the Chunky Dough kiosk at the tram stop. Now the brand is stepping beyond campus, bringing its Filipino-inspired treats to a full cafe for everyone whose study days are behind them but whose sweet tooth never went away.

Professionally trained pastry chef Jeff has spent his career in luxury hotel kitchens around the world. Originally from the Philippines, Jeff sharpened his craft in high-end patisseries before deciding it was time to build something of his own with a taste of home.

Chunky Dough's story started at the Gold Coast's night markets, where Jeff's handcrafted desserts earned a loyal following. That led to the kiosk at the Griffith Uni tram station — and now the business has levelled up again with its own bricks-and-mortar home in Southport.

The new space is bigger than the kiosk, offering indoor and outdoor seating for around 20 guests. Clean lines, earthy tones and timber finishes create an understated backdrop so the desserts can take centre stage.

Drawing on his Filipino heritage, Jeff pairs international pastry technique with flavours like ube, pandan, calamansi, mango and coconut. The result is a menu that feels familiar and nostalgic to anyone who knows Filipino flavours, while offering something entirely new to everyone else.

The name tips off one of the menu's stars. The Chunky Cookies are generously sized, with crisp golden edges and soft, gooey centres, baked fresh each day with premium ingredients.

Then there are the loaded Croffles — buttery croissants pressed to a perfect crisp and piled high with indulgent toppings. Think croissant meets waffle, with the dessert factor turned up a notch.

The dessert and drinks menu is neatly organised by flavour, essentially a choose-your-own adventure, which makes the hardest part deciding what to try first. The usual coffee orders are available, but a proper flavour journey awaits if you stray from your regular order.

Mango shows up everywhere, from the Mango Graham Croffle layered with mascarpone, fresh mango and graham crumbs, to a Mango Sago Con Yelo drink built on creamy shaved ice, mango, sago and mango gelato.

Ube gets the royal treatment in the Ube Leche Flan Croffle, which pairs ube custard and mascarpone with leche flan and caramel, while the Ube Flan Drink combines ube milk with cheese cream and a whole leche flan on top.

Strawberry lovers can go for the Strawberry Shortcake Croffle or a Strawberry Matcha, while matcha gets its own spotlight with the Matcha Red Bean Croffle and a refreshing Matcha Honey Citrus drink.

Rounding out the crowd-pleasers are Tiramisu, Choco S'mores with torched marshmallow, and the Filipino-inspired Turon, which combines caramelised saba, jackfruit, mascarpone and crispy turon skin.

And that's just the beginning. There's plenty more to discover across the menu, so treat it as your excuse to keep coming back and work your way through it.
