Step into the kitchen of a niche Tokyo ramen shop. The most special part of the experience is personally participating in the entire process of making a bowl of ramen. Under the chef's guidance, you will learn to appreciate the dedication and craftsmanship behind every delicious bite, feeling the artisan spirit hidden in the bustling atmosphere.

The experience begins with preparing the ingredients and making the soup base. The chef patiently demonstrates how to handle the bones and skim off the foam. Following the chef's lead, I placed the cleaned chicken bones and pork bones into the pot. Watching the broth gradually become rich and flavourful, I truly understood the hard work that goes into a bowl of savoury soup.

The most challenging part was making the noodles by hand. Taking a piece of rested high‑gluten dough, I repeatedly kneaded, stretched, and folded it under the chef's guidance, adjusting the pressure and rhythm until I produced noodles that were evenly thick and springy. Feeling the elasticity of the dough by hand made me realise the chef's unwavering dedication over the years.

Next came cooking the noodles and assembling the toppings. I had to manage the heat and timing of the noodle boil, and neatly arrange the slow‑braised chashu and the perfectly timed soft‑boiled egg. Every step had its own intricacies, with the chef providing meticulous guidance and correcting my small mistakes along the way.

When the first bowl of ramen I made with my own hands was served, the chewy noodles were coated in the savoury broth. Every mouthful carried the sense of achievement from making it myself, along with the chef's artisan spirit. This behind‑the‑scenes production experience not only taught me the techniques of making ramen, but also helped me understand the charm of Tokyo ramen—it lies in the warmth of handcrafting and the focused dedication passed down through generations.
