Harbin is the political, economic, cultural, and international exchange centre in the northern part of Northeast China. It has long, severe winters and short, cool summers, making it a prime destination for winter ice and snow tourism and summer避暑 resorts. It is renowned for its annual International Ice and Snow Festival and its rich European ambience, and is also one of China's first batch of outstanding tourist cities and a famous historical and cultural city. Guo Bao Rou is the most famous dish in Northeastern cuisine, made primarily with pork and featuring a sweet and sour flavour. Harbin Red Sausage is a renowned local specialty. The history of ice carving in Harbin can be traced back to the Ice Lantern Garden Party held in Zhaolin Park in 1963. Since 1985, Harbin has hosted the China Harbin International Ice and Snow Festival starting on 5 January each year.
