During autumn, bakeries across France feature thin apple tarts known as tartes fines aux pommes. These simple pastries consist of a thin crust of buttery, crackly puff pastry topped with a fan of baked apples and finished with a glaze. They are traditionally served plain, though they can be paired with vanilla, cinnamon, or salted butter caramel ice cream.

Baking and Ingredients

The pastry uses a quick puff method requiring 110g of flour, 0.25 teaspoon of salt, 115g of chilled unsalted butter, and 3 tablespoons of ice water. The recipe yields 8 servings using 700g of apples, 1.5 to 2 tablespoons of melted butter, 2 tablespoons of sugar, and apple jelly, apricot jam, or red currant jelly for the glaze. Standard ovens are recommended over convection settings for better browning.
