The establishment brings a contemporary take on familiar Singaporean and Southeast Asian flavours into an elegant, tropical setting. Named after Singapore’s iconic heritage tree, the venue functions as an air-conditioned sanctuary where diners can escape the heat while remaining connected to the surrounding gardens. The interior design embraces what the restaurant terms “Straits Maximalism”, featuring rich colours, intricate details, and tropical opulence. Additionally, it operates as a pet-friendly indoor concept, providing a relaxed environment for visitors accompanied by their furry companions.

Starters and Traditional Beverages

The culinary experience begins with creative interpretations of local street food favourites.

* Stuffed Chicken Wings ($18 for three): Meticulously deboned chicken wings packed with a rich, savoury fresh prawn paste farce. Unlike traditional har cheong gai, these wings are grilled rather than deep-fried, resulting in smoky charred skin and juicy meat. The dish is accompanied by a housemade Hainanese-style chilli sauce.

* Signature Otak Otak Slider ($18): Bite-sized sliders featuring a housemade seafood patty composed of batang fish and tiger prawns. Tucked inside a toasted brioche bun, the patty is paired with a fragrant kaffir lime aioli that adds a creamy, citrusy balance.

* Kopi C ($5.90 hot / $6.90 cold): Traditional local coffee brewed from beans sourced from the Gia Lai Highlands in Vietnam and roasted in Singapore by Generation Coffee Roasters.

Mains and Seafood Specialties

The main courses elevate local culinary staples through refined preparation and premium ingredients.

* Singapore Chilli Crab Pasta ($27): Combines al dente rigatoni with soft-shell crab, blue swimmer crab, and a sous vide egg. The pasta is coated in a thick housemade chilli crab sauce, topped with a whole crispy deep-fried soft-shell crab and a silky egg yolk.

* Andaman Prawn Risotto ($32): Creamy risotto cooked in an intensely flavoured lobster bisque, finished with plump Andaman sea prawns, sweet corn kernels, and crispy sakura ebi for added texture.

Desserts and Sweet Finishes

To conclude the meal, Tembusu offers options ranging from traditional interpretations to refreshing fruit-based treats.

* Signature Grand Dessert Bowl ($13.90): A contemporary take on traditional Chinese Tong Sui, featuring an eight-treasure fresh milk dessert soup loaded with herbal jelly, red bean, peach gum, lotus seeds, taro balls, osmanthus, and water chestnut.

* Pink Guava Snow Ice ($12.90): Fine, fluffy snow ice infused with pink guava flavour, offering a fruity sweetness and mild tartness that serves as a refreshing palate cleanser.
