The chef is a Hong Kong native who previously worked at the five-star Han Lai Celebrity Cuisine in Kaohsiung, and every dim sum item is handmade fresh daily in limited quantities — sold until they run out.

The signature claypot rice is made to order with springy grains and a crispy golden crust at the bottom, finished with sauce.
