Hi Stranger: Singapore's New Immersive Cocktail Bar in Tanjong Pagar
Singapore's bar scene just got a whole lot more interesting. Hi Stranger, a 26-seater opposite Maxwell MRT Exit 3, has thrown open its doors on Neil Road — joining an already stellar lineup that includes The Store and Side Door.

What makes this opening stand out isn't just the drinks. Hi Stranger rebrands itself every few months with a fresh concept, and its debut theme — 'A World Aglow' — draws inspiration from the acclaimed documentary 'Fire of Love' about two French volcanologists. Expect lava-like visuals, mood-matched playlists, and a rotating menu that follows whichever story the founders Bastien Renard and Roomi Luo want to tell next.
The Space and Experience
The bar transforms dramatically from day to night. Mornings and afternoons feel café-like under an open skylight with semi-private booths; evenings bring a warm reddish glow. One standout feature is the 'scent wall' at the back — visitors can sample the bar's spirit selection before ordering, from St. Germain elderflower liqueur to the rare Savanna Rum from Réunion Island, exclusively available here.
The Drinks
The menu spans 29 cocktails: 20 classics and nine seasonal signatures, all kept minimalist (six components max) so the base spirit shines. Standouts include the Funky Daiquiri (S$26, Jamaican rum with a whisper of chilli), the basil martini (S$26, olive brine with a gentle herbal lift), and the headliner Naughty Martini (S$28, a bold pour of Savanna rum, Jamaican rum, and gin). For something smoky, The Krafft Negroni (S$25) adds a mezcal float to the classic formula.
Cocktail beginners are well looked after — a hand-carved wooden flavour tool (crafted by Bastien's father) helps narrow preferences before committing.
The Food
Chef Edwin Tay (formerly of Michelin-starred Nouri and Rhubarb) has designed a menu that goes well beyond bar snacks. Must-tries: prawn toast with sesame and mayo (S$12), miso cabbage with cashew and garlic purée (S$16), Korean wheat noodles with clams (S$22), and a surprisingly well-executed Spanish octopus with romesco (S$48).
Insider Tips
Visit between 6pm and 8pm for a complimentary prawn toast with every cocktail. And keep an eye out for the 'Catch The Ramos' sign — when it lights up, you've got minutes to claim the day's one and only off-menu Ramos Gin Fizz.
