Lanzhou, also known as Golden City, is the only provincial capital where the Yellow River runs through the city, and a key city on the Silk Road. Key attractions include Zhongshan Bridge (the first bridge over the Yellow River, with spectacular night views), the Yellow River Mother Sculpture, Gansu Provincial Museum (home to the renowned Bronze Galloping Horse), and Baitashan Park (offering panoramic views of the Yellow River and the city). The cuisine is predominantly halal, with Lanzhou beef noodles following the principle of 'clear broth, white radish, red chili oil, green coriander, and yellow noodles'; hand-grabbed lamb is tender and not gamey, yellow-braised lamb is rich and savoury, while milk-egg fermented rice, grey bean paste, and sweet fermented barley are authentic local desserts.
